Savory Asparagus Tart

Ingredients
- 1 roll of ready-to-use brisée pastry or puff pastry
- 400 g fresh asparagus
- 3 eggs
- 200 ml cooking cream
- 100 g grated Parmesan
- Salt and pepper to taste
- Nutmeg (optional)
- Butter or olive oil for greasing the pan

Preheat the oven to 180 °C and grease a tart pan with a little butter or olive oil.

Roll out the brisée or puff pastry into the pan, trim the excess pastry from the edges, and prick the base with a fork.

Prepare the asparagus: wash the asparagus, remove the woody part of the stem, and cook in boiling salted water for about 5-7 minutes. They should remain crisp. Then drain and cut into pieces, leaving the tips whole for decoration.

In a bowl, beat the eggs with the cooking cream, grated Parmesan, salt, pepper, and a pinch of nutmeg.

Arrange the asparagus pieces on the pastry in the pan and pour the egg and cream mixture over them. Decorate with the asparagus tips set aside.

Bake at 180 °C for about 30-35 minutes or until the surface of the tart is golden and the pastry is well cooked.
