Ingredients

  • 150 g whole wheat flour
  • 50 g all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 250 ml egg whites (about 8 large egg whites)
  • 100 g grated cheese (e.g., Parmesan or Pecorino)
  • 60 ml extra virgin olive oil
  • 100 g cooked ham cut into cubes (optional)
  • 50 g cherry tomatoes, halved

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tin by greasing it or lining it with paper liners.

  2. In a large bowl, mix the whole wheat flour, all-purpose flour, baking powder, baking soda, salt, black pepper, and aromatic herbs.

  3. In another bowl, lightly beat the egg whites, then add the grated cheese and extra virgin olive oil, mixing well.

  4. Combine the dry ingredients with the wet ingredients, stirring with a spatula until you have a homogeneous batter without overmixing.

  5. If using cooked ham and cherry tomatoes, add them now and gently fold into the batter.

  6. Fill the paper liners or muffin tin compartments about 3/4 full.

  7. Bake the muffins for about 20-25 minutes or until golden and a toothpick inserted in the center comes out clean.

  8. Remove from the oven and let the muffins cool slightly before serving.

For a vegetarian version, omit the cooked ham and add vegetables of your choice such as chopped spinach, grated zucchini, or diced bell peppers.
