Ingredients
- 1 roll of ready-made puff pastry
- 3 medium-sized leeks
- 200 ml fresh cream
- 3 eggs
- 2 tablespoons curry powder
- Salt to taste
- Pepper to taste
- Extra virgin olive oil
- 100 g grated cheese (choose between parmesan or pecorino for a more intense flavor)
Preparation
- Preheat the oven to 180 °C (350 °F).
- Clean the leeks by removing the toughest parts and cut them into thin rounds.
- In a pan, heat a drizzle of oil and sauté the leeks until tender. Add the curry, salt and pepper and let them flavor for a few minutes.
- In a bowl, beat the eggs and add the fresh cream. Adjust salt and pepper and incorporate the grated cheese.
- Roll out the puff pastry in a baking pan, prick the bottom with a fork and pour in the sautéed leeks, distributing them evenly.
- Pour the egg and cream mixture over the leeks and bake for about 30-40 minutes or until the surface is golden and puffed.
- Remove the savory tart from the oven and let it cool slightly before serving.
