Savory Mascarpone and Zucchini Tart

Ingredients
- 1 roll of round puff pastry
- 300 g zucchini
- 250 g mascarpone
- 2 eggs
- Grated Parmesan (to taste)
- Salt and pepper to taste
- Extra virgin olive oil
- Fresh or dried chives (optional)
Preparation
- Preheat the oven to 180 °C.
- Wash the zucchini and slice them into thin rounds. In a pan, heat a drizzle of extra virgin olive oil and sauté the zucchini until they become soft. Lightly salt them.
- In a bowl, mix the mascarpone with the eggs until you obtain a homogeneous mixture. Add the grated Parmesan, seasoning with salt and pepper to taste.
- Roll out the puff pastry in a pie dish, preferably with parchment paper underneath to prevent sticking.
- Distribute the cooked zucchini on the puff pastry base.
- Pour the mascarpone and egg mixture over the zucchini, leveling with a spoon or spatula.
- If desired, sprinkle the surface with chives to add an aromatic touch.
- Bake the savory tart for about 25-30 minutes or until the surface is golden and the puff pastry is well cooked.
- Remove the savory tart from the oven and let it cool slightly before serving.
