Savory Onion and Gruyère DOP Tart

Here is the recipe for a delicious savory tart with onions and Gruyère DOP.

Ingredients

  • 1 roll of ready-to-use shortcrust pastry or puff pastry
  • 500 g white onions
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter
  • 200 g Gruyère DOP, grated
  • 3 eggs
  • 200 ml fresh cream
  • Salt and black pepper to taste
  • Grated nutmeg, to taste
  • 1 pinch of sugar (optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. Peel and finely slice the onions.
  3. In a large skillet, heat the oil and butter. Add the onions, a pinch of salt and, if desired, a pinch of sugar to aid caramelization.
  4. Let the onions wilt over medium-low heat until golden and soft, stirring occasionally. This process may take about 20-25 minutes.
  5. Meanwhile, place the shortcrust pastry in a tart pan previously greased or lined with parchment paper, prick the bottom with a fork and blind bake (i.e., covering it with parchment paper and dried legumes or special pastry weights) for about 10 minutes.
  6. In a bowl, beat the eggs with the cream. Add the grated Gruyère, a pinch of salt, black pepper and nutmeg. Mix well to obtain a homogeneous mixture.
  7. When the onions are ready, distribute them evenly on the pastry base.
  8. Pour the egg and cream mixture over the onions.
  9. Bake the savory tart for about 30-35 minutes or until the surface is golden and the filling has set.
  10. Remove from the oven and let cool slightly before serving.
