Savory Pancakes

Savory pancakes can be an excellent solution for a brunch or a light dinner. Here is a base recipe to which you can add savory ingredients to your liking, such as cheese, aromatic herbs, or chopped vegetables.

Ingredients

  • 150 grams of flour
  • 1 egg
  • 250 ml of milk
  • 1 pinch of salt
  • 1 teaspoon of baking powder for savory cakes
  • 2 tablespoons of olive oil (plus extra for cooking)
  • Additional ingredients to taste: grated cheese, diced pancetta, chopped aromatic herbs, chopped spinach, grated zucchini, etc.

Preparation

  1. In a bowl, combine the flour, salt, and baking powder. Mix the dry ingredients.
  2. In another bowl, beat the egg and add the milk and olive oil.
  3. Incorporate the liquid ingredients into the dry ingredients and mix until you obtain a smooth and homogeneous mixture.
  4. Now add the additional ingredients you have chosen (for example: cheese, herbs, pancetta cubes, etc.) and incorporate them into the batter.
  5. Heat a non-stick pan over medium heat and add a drizzle of oil.
  6. Pour a ladle of batter to form each pancake. Cook for about 2-3 minutes per side or until golden and puffed.
  7. Serve them hot.

You can garnish the savory pancakes with Greek yogurt, sliced avocado, or a fried egg, for a more substantial dish.

Trivia

Although pancakes are traditionally sweet and a typically American specialty, the savory version is extremely versatile and allows for many flavors and traditions, including the addition of ingredients typical of Italian cuisine such as sun-dried tomatoes or basil.
