Savory Pancakes with Parmigiano DOP Sauce

When we say pancakes, we tend to think of the sweet version typical of American breakfast, but this savory variant is perfect for a brunch or an informal dinner.
Ingredients
For the pancakes:
- 150 g flour
- 250 ml milk
- 2 eggs
- 1 pinch of salt
- 30 g melted butter
- 1 teaspoon baking powder for savory cakes
- 50 g grated Parmigiano DOP
For the Parmigiano DOP sauce:
- 200 ml fresh cream
- 100 g grated Parmigiano DOP
- Salt and pepper to taste
- Nutmeg to taste
Preparation
- Start by preparing the pancake batter. In a large bowl, sift the flour with the baking powder and salt.
- In another bowl, lightly beat the eggs and then add the milk and cooled melted butter.
- Combine the liquid mixture with the dry ingredients, whisking to avoid lumps. Add the grated Parmigiano and mix everything well.
- Heat a non-stick pan and, when hot, pour a ladle of batter to form the pancakes. When bubbles appear on the surface and the edges start to brown, flip the pancake and cook for another two minutes on the other side. Repeat until the batter is used up.
- For the Parmigiano sauce, heat the cream in a saucepan over low heat. Add the grated Parmigiano, a pinch of salt, pepper and nutmeg to taste, stirring until the cheese has melted creating a thick and homogeneous sauce.
- Serve the pancakes hot with the Parmigiano sauce poured on top or on the side for dipping.

Parmigiano is a long-aged Italian DOP cheese, known for its rich, granular flavor. Historically, it was produced by monks in the abbeys of the Po Valley (hence the name) as a way to preserve the nutritional value of milk. In addition to enriching these savory pancakes, it is excellent enjoyed on its own or used in many other Italian dishes.
