Savory Pie with Radicchio and Speck

Ingredients
- 1 roll of puff pastry or shortcrust pastry
- 250 g red radicchio
- 150 g sliced speck
- 200 g ricotta
- 2 eggs
- 100 g grated cheese (Parmesan or Parmesan)
- Salt and pepper to taste
- Extra virgin olive oil to taste
- 1 clove of garlic (optional)
Preparation
- Start by preheating the oven to 180 °C.
- Clean the radicchio and cut it into thin strips. In a pan, lightly sauté a clove of garlic in oil, then add the radicchio, season lightly with salt and let it wilt for a few minutes. Remove the garlic and set aside.
- In a bowl, mix the ricotta with the eggs and grated cheese. Fold in the now lukewarm radicchio and add a pinch of salt and pepper.
- Roll out the puff pastry in a previously greased baking pan or lined with parchment paper. Arrange the slices of speck on the surface, making sure they evenly cover the base.
- Pour the radicchio and ricotta mixture over the puff pastry and level it well with a spatula.
