Savory Spinach and Salmon Tart

Ingredients
- 1 roll of rectangular or round puff pastry
- 250 g fresh or frozen spinach
- 200 g smoked salmon
- 200 g ricotta
- 2 eggs
- 100 g grated cheese (Parmesan, Pecorino or a mix)
- Salt and pepper to taste
- Nutmeg to taste
- Olive oil
- 1 clove of garlic (optional)
- Butter and breadcrumbs for the pan
Preparation
- Preheat the oven to 180 °C.
- If using frozen spinach, thaw in advance and squeeze out excess water well. If fresh, wash and blanch briefly in a pot of boiling water for 2-3 minutes, then squeeze out all the water.
- In a pan, sauté a clove of garlic in olive oil (if you decide to use it) and add the spinach. Cook for about 5 minutes. Remove the garlic clove and let the spinach cool.
- Cut the smoked salmon into strips.
- In a bowl, mix the ricotta with the eggs, grated cheese, a grating of nutmeg, salt and pepper until you get a homogeneous mixture. Add the spinach and the cut salmon.
- Prepare a baking pan (round or rectangular that matches the size of the puff pastry) by greasing it with a little butter and sprinkling it with breadcrumbs. This will help achieve a crispier tart.
- Roll out the puff pastry in the pan, prick the bottom with the tines of a fork and pour the spinach, salmon and ricotta mixture inside the pastry.
- Fold the edges of the puff pastry inward to partially close the tart.
- Bake the savory tart for about 25-30 minutes or until the surface is golden and crispy.
