Savory Tart
17/11/2023The savory tart is a very versatile dish and can be filled in many different ways. Here is a basic recipe for a savory tart that you can then customize to your taste.
Ingredients
- 1 roll of puff pastry or ready-made shortcrust pastry (or homemade if you have time and desire)
- 200 g of soft cheese (such as ricotta or goat cheese)
- 150 g of grated cheese (such as Emmental, Fontina or Parmesan)
- 3 eggs
- A handful of aromatic herbs (such as parsley, basil or chives), chopped
- 150 g of cooked ham, pancetta or other cured meats of your choice, cubed
- Salt and pepper to taste
- Olive oil or butter for greasing the pan
Preparation
- Preheat the oven to 180 °C.
- Roll out the puff pastry or shortcrust pastry into a previously greased pan with olive oil or butter, making sure the edges rise slightly up the sides.
- In a bowl, mix the cheeses with the eggs until you obtain a homogeneous mixture. Add the chopped aromatic herbs, salt and pepper to taste.
- Distribute the chosen cured meat cubes on the bottom of the puff pastry.
- Pour the egg and cheese mixture on top.
- Bake the tart for about 30-40 minutes, or until the surface is golden and the filling is well cooked.
- Let it cool slightly before serving.
You can also add vegetables to the filling such as spinach, zucchini or peppers, previously sautéed in a pan and well squeezed, or try with pieces of salmon or other fish of your choice for a more refined variant.
Trivia
The savory tart is also known as quiche in France, where the most famous is the “Quiche Lorraine”, which involves the use of pancetta and fresh cream in the filling. In Italy it is very common to find it also in buffets or as a quick meal, often accompanied by a fresh salad.
