Savory Zucchini Tart

Ingredients
- 1 roll of puff pastry or pâte brisée
- 3-4 medium zucchini
- 3 eggs
- 200 ml fresh cream or milk
- 100 g grated cheese (Parmesan, Pecorino or a mix)
- 1 small onion
- Salt and pepper to taste
- Extra virgin olive oil
- Aromatic herbs to taste (thyme, basil, mint)
- Butter or oil for greasing the pan
Preparation
- Preheat the oven to 180 °C.
- Thinly slice the zucchini and onion. In a skillet, heat a drizzle of oil and sauté the onion until translucent. Add the zucchini and cook for about 10 minutes. Season with salt and pepper.
- Beat the eggs in a bowl, then add the cream, grated cheese and chopped aromatic herbs. Mix well.
- Roll out the puff pastry in a pan previously greased with butter or oil. Prick the base with a fork to prevent it from puffing up during baking.
- Spread the zucchini evenly over the pastry, then pour the egg and cream mixture on top.
- Fold the edges of the puff pastry inward and bake for about 30-35 minutes, or until the surface is golden and the filling is fully cooked.
- Let it cool slightly for a few minutes before serving.
The savory zucchini tart can be customized in many ways, for example by adding other types of cheese such as mozzarella or feta, or enriched with diced ham or speck. An Italian touch could be the addition of zucchini blossoms for a more colorful presentation and a delicately floral flavor.
