Savoy Cabbage Rolls with Cod Fillets

Ingredients
- 8 large savoy cabbage leaves
- 4 cod fillets (about 150 g each)
- 2 garlic cloves
- 200 ml tomato passata
- 1 glass white wine
- Extra virgin olive oil
- Salt and pepper to taste
- Chopped parsley (for garnish)
- (Optional) Black olives or capers for a Mediterranean touch

Start by blanching the savoy cabbage leaves in boiling salted water for about 2-3 minutes. Then, drain them and place them in cold water to stop the cooking and keep their vibrant color.

Meanwhile, take the cod fillets and, if necessary, clean them by removing any bones. Season them with a little salt and pepper.

Lay the savoy cabbage leaves on a work surface and place a cod fillet on each one. Wrap the cabbage around the fish, sealing the rolls well.

In a large pan, sauté the garlic cloves in extra virgin olive oil and then remove them. Place the rolls in the pan and lightly brown them on both sides.

Deglaze with white wine and let the alcohol evaporate for a couple of minutes.

Add the tomato passata, salt and pepper to taste. If you like, you can enrich the sauce with black olives or capers. Let cook over medium-low heat for about 15-20 minutes with the lid on, turning the rolls halfway through cooking.

Once cooked, transfer the rolls to a serving plate and sprinkle with fresh chopped parsley for garnish.
