Seed Crackers

Seed crackers are a healthy and crunchy snack that pairs well with cheeses, pâtés, or simply enjoyed on their own. Here I propose a version with an Italian touch.

Ingredients

  • 200 g whole wheat flour (or type 00 flour if you prefer)
  • 30 g sesame seeds
  • 30 g flax seeds
  • 30 g sunflower seeds
  • 30 g pumpkin seeds
  • 1 teaspoon fine salt
  • 4 tablespoons extra virgin olive oil
  • About 120 ml water (the quantity may vary depending on the flour’s absorption)
  • Fresh chopped rosemary (optional for an aromatic touch)

Preparation

  1. Preheat the oven to 180 °C and prepare a baking tray by lining it with parchment paper.
  2. In a large bowl, combine the flour, all the seeds, the salt and, if you like, some chopped rosemary to give your crackers extra flavor.
  3. Add the extra virgin olive oil and start mixing.
  4. Pour the water little by little, starting to knead with your hands or a spoon until you obtain a homogeneous and workable dough, but not too sticky; if necessary add more water or flour.
  5. Roll out the dough on a lightly floured surface until you get a thickness of about 3-5 mm.
  6. With a pastry wheel or a knife, cut the dough into squares or rectangles of the desired size.
  7. Transfer the crackers to the prepared baking tray and prick them lightly with a fork to prevent them from puffing up during baking.
  8. Bake in the oven for about 15-20 minutes or until the crackers become golden and crispy.
  9. Let cool completely before serving or storing in an airtight container to maintain crispness.
