Shrimp and Zucchini Skewers

Shrimp and zucchini skewers are a light and tasty summer dish that combines the sweetness of shrimp with the freshness of zucchini. Here is the recipe to prepare Italian-style shrimp and zucchini skewers:

Ingredients

  • 400 g peeled and deveined shrimp
  • 2 medium zucchini
  • 1 untreated lemon
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • Aromatic herbs (such as parsley or basil) to taste
  • Wooden or metal skewers

Preparation

  1. Start by soaking the wooden skewers in water for about 30 minutes to prevent them from burning during cooking.

  2. Wash the zucchini, cut them into slices that are not too thick, and grill them beforehand on a hot griddle or grill so they will already have a more intense flavor.

  3. Meanwhile, peel the shrimp (if not already cleaned) by removing the shell and the intestine and rinse them under cold running water.

  4. Pat the shrimp and grilled zucchini dry well with paper towels.

  5. Lightly rub the shrimp with lemon zest to flavor them and drizzle with a bit of lemon juice.

  6. Thread the shrimp and zucchini slices alternately onto the skewers.

  7. Season the skewers with extra virgin olive oil, salt, pepper, and if desired, finely chopped aromatic herbs.

  8. Grill the skewers on a hot griddle or barbecue for about 2-3 minutes per side, or until the shrimp turn a nice pink color and are well cooked.

  9. Serve immediately, accompanied if desired with lemon slices and an additional drizzle of oil.
