Spaghetti and Shrimp

Shrimp spaghetti is a delicious dish of marine origin that combines pasta with the flavors of the sea. Here is the recipe for a great shrimp spaghetti dish:

Ingredients

  • 320 g di spaghetti
  • 400 g di gamberi, già puliti
  • 2 spicchi d’aglio
  • Prezzemolo fresco tritato, q.b.
  • 200 ml di vino bianco secco
  • 250 g di pomodorini ciliegino
  • Olio extravergine d’oliva, q.b.
  • Sale e pepe, q.b.
  • Peperoncino (opzionale), q.b.

Preparation

  1. Start by bringing plenty of salted water to a boil in a pot to cook the spaghetti.
  2. In the meantime, in a large pan, heat a drizzle of extra virgin olive oil and sauté the whole garlic cloves (you can remove them later, if you prefer) and the chili pepper, if using.
  3. Add the cleaned shrimp to the pan and sear them for a couple of minutes per side, then deglaze with the white wine. Let the alcohol evaporate over high heat.
  4. Cut the cherry tomatoes in half and add them to the pan with the shrimp. Cook for 5-10 minutes until the cherry tomatoes are slightly wilted and have released their juice creating a sauce.
  5. In the meantime, cook the spaghetti in boiling water following the times indicated on the package to achieve al dente cooking.
  6. Drain the al dente spaghetti, reserving some cooking water, and transfer them to the pan with the shrimp and cherry tomato sauce.
  7. Mix the spaghetti well in the pan, adding, if necessary, a bit of cooking water to emulsify the pasta and create a homogeneous sauce.
  8. Turn off the heat, add the fresh chopped parsley and mix well.
  9. Plate the shrimp spaghetti, finishing with a sprinkle of pepper and, if you like, more fresh parsley.

Trivia

It is not uncommon to find seafood pasta enriched with grated lemon zest to give freshness to the dish. Additionally, in some variations of the recipe, a base with assorted seafood can be prepared to give more flavor to the dish.
