Spaghetti with Shrimp and Arugula

Ingredients

  • 350 g of spaghetti
  • 300 g of peeled shrimp
  • 100 g of fresh arugula
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Fresh red chili or flakes (optional)
  • Juice of 1 lemon
  • Grated lemon zest (optional)
  • Salt and pepper to taste
  • Dry white wine (optional)

Preparation

  1. In a large pan, heat a generous amount of extra virgin olive oil and sauté the finely chopped garlic (and the chili, if used).

  2. Add the shrimp and cook them over high heat until they turn pink and are fully cooked, stirring often.
