Spelt Muffins

Ingredients

  • 250 g spelt flour
  • 100 g brown sugar
  • 80 ml seed oil
  • 2 eggs
  • 120 ml milk
  • 1 sachet baking powder
  • A pinch of salt
  • Vanilla extract or the grated zest of 1 lemon (for flavoring)

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tin by lining the individual cups with paper liners.
  2. In a bowl, mix the spelt flour with the baking powder and the pinch of salt.
  3. In another bowl, beat the eggs with the sugar until you obtain a frothy mixture.
  4. Add the oil, milk, and vanilla or lemon zest to the frothy mixture, stirring well to combine the liquid ingredients.
  5. Incorporate the dry ingredients into the liquid mixture, stirring from the bottom up to avoid lumps, until you obtain a homogeneous batter.
  6. Pour the batter into the liners, filling them 2/3 full, and, if desired, add pieces of fruit, chocolate chips, dried fruit, or other ingredients of your choice on top.
  7. Bake in the preheated oven for about 20 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.
  8. Remove the muffins from the oven and let them cool on a wire rack before serving.
