Ingredients
- 250 g spelt flour
- 100 g brown sugar
- 80 ml seed oil
- 2 eggs
- 120 ml milk
- 1 sachet baking powder
- A pinch of salt
- Vanilla extract or the grated zest of 1 lemon (for flavoring)
Preparation
- Preheat the oven to 180 °C and prepare a muffin tin by lining the individual cups with paper liners.
- In a bowl, mix the spelt flour with the baking powder and the pinch of salt.
- In another bowl, beat the eggs with the sugar until you obtain a frothy mixture.
- Add the oil, milk, and vanilla or lemon zest to the frothy mixture, stirring well to combine the liquid ingredients.
- Incorporate the dry ingredients into the liquid mixture, stirring from the bottom up to avoid lumps, until you obtain a homogeneous batter.
- Pour the batter into the liners, filling them 2/3 full, and, if desired, add pieces of fruit, chocolate chips, dried fruit, or other ingredients of your choice on top.
- Bake in the preheated oven for about 20 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.
- Remove the muffins from the oven and let them cool on a wire rack before serving.
