Spelt Tartlet with Mascarpone Cream and Chocolate
17/11/2023Here is the recipe for a delicious spelt tartlet with mascarpone cream and chocolate. This dessert combines the rusticity of spelt with the sweetness of mascarpone and the richness of chocolate. A perfect pairing for a refined after-dinner treat or for a special occasion.
Ingredients
- 100 g pearl spelt
- 200 ml milk
- 1 vanilla pod
- 30 g granulated sugar
- 2 eggs
- 150 g mascarpone
- 50 g dark chocolate
- Unsweetened cocoa powder (for decoration)
Preparation
- Start by washing the spelt well under running water and soak it for about 30 minutes.
- In a small saucepan, bring the milk to a boil with the vanilla pod split lengthwise and the seeds extracted. Add the drained spelt and cook over low heat for about 30 minutes, until the spelt is soft and has absorbed the milk.
- Remove the spelt from the heat and let it cool slightly. Remove the vanilla pod.
- In a bowl, beat the eggs with the sugar until you get a light and frothy mixture.
- Incorporate the cooked spelt into the egg and sugar mixture, stir gently.
- Pour the mixture into the single-portion tartlets previously buttered and floured and bake in a preheated oven at 180 °C for 20-25 minutes or until golden.
- Meanwhile, prepare the mascarpone cream by simply mixing the mascarpone with a tablespoon of powdered sugar (adjust according to your preferred sweetness) until you get a smooth and spreadable cream.
- Melt the dark chocolate in a double boiler or in the microwave, being careful not to burn it.
- Once the tartlets are baked and cooled, spread the mascarpone cream on top and decorate with the melted chocolate.
- For a final touch, dust a veil of unsweetened cocoa over the mascarpone cream.
