Spiderweb Cake
17/11/2023The Spiderweb Cake is a themed dessert often seen during Halloween parties, but it can be fun any time of the year, especially if you have children at home. Here I present a simple version of this cake, ideal for creating a bit of a “spooky” atmosphere.
Ingredients
For the cake base:
- 200 g sugar
- 200 g flour
- 200 g softened butter
- 4 eggs
- 1 packet baking powder
- 1 pinch of salt
- 30 g cocoa powder
For the topping and decoration:
- 100 g dark chocolate
- 100 ml fresh cream
- 2 tablespoons apricot jam (or your preferred flavor)
- 50 g white chocolate
Preparation

Base preparation: Preheat the oven to 180 °C (350 °F). Meanwhile, beat the softened butter with the sugar until light and fluffy. Add the eggs one at a time, continuing to beat.

In a separate bowl, sift together the flour, baking powder, cocoa, and salt. Fold the dry ingredients into the egg, sugar, and butter mixture, stirring gently to avoid deflating the batter.

Pour the batter into a round cake pan (22-24 cm diameter) that has been buttered and floured or lined with parchment paper. Bake for about 35-40 minutes. Check doneness with a toothpick: if it comes out clean, the cake is ready.

Remove the cake from the oven and let it cool completely.

Topping preparation: Melt the dark chocolate in a double boiler or microwave, then stir in the cream to create a smooth, homogeneous ganache. Spread it over the cooled cake.

Creating the spiderweb: Warm the jam to soften it and use it to cover part of the top of the cake; this will make the surface sticky so the white chocolate web adheres better.

Melt the white chocolate in a double boiler or microwave and place it in a piping bag fitted with a very fine tip (or use a parchment paper cone cut very finely at the end). Pipe concentric spirals, starting from the center of the cake and working outward.

Using a toothpick or the tip of a knife, draw lines from the center of the cake toward the edge, passing through the white chocolate spirals to create the “spiderweb” effect.
Trivia
Many pastry chefs enjoy customizing the spiderweb cake further, for example by adding a “spider” made from chocolates or dark fondant.
