Ingredients
- 150 g fresh spinach
- 100 g thinly sliced speck
- 1 green apple (Granny Smith or a crunchy variety)
- 50 g shelled walnuts
- Parmesan shavings to taste
- Extra virgin olive oil to taste
- Lemon juice to taste
- Salt and black pepper to taste
Preparation
- Start by washing the spinach thoroughly under running water. After washing, gently pat them dry with a clean cloth or a salad spinner.
- Cut the speck into strips and sauté them in a non-stick pan until crispy. Remove the speck from the pan and place it on a plate lined with paper towels to absorb excess oil.
- Prepare the apple by washing and drying it. Slice it thinly or cut into cubes, depending on your preference. If desired, you can leave the skin on for extra crunch.
- In a large bowl, combine the spinach, apple slices or cubes, and crispy speck.
- Toast the walnuts in a dry pan for a few minutes until lightly golden and fragrant, then add them to the salad.
