Spinach, Speck, and Apple Salad

Here is the recipe for a delicious spinach, speck, and apple salad, perfect for a light but tasty meal.

Ingredients

  • 150 g fresh spinach
  • 100 g thinly sliced speck
  • 1 green apple (Granny Smith or a crunchy variety)
  • 50 g shelled walnuts
  • Parmesan shavings to taste
  • Extra virgin olive oil to taste
  • Lemon juice to taste
  • Salt and black pepper to taste

Preparation

  1. Start by washing the spinach thoroughly under running water. After washing, gently pat them dry with a clean cloth or a salad spinner.
  2. Cut the speck into strips and sauté them in a non-stick pan until crispy. Remove the speck from the pan and place it on a plate lined with paper towels to absorb excess oil.
  3. Prepare the apple by washing and drying it. Slice it thinly or cut into cubes, depending on your preference. If desired, you can leave the skin on for extra crunch.
  4. In a large bowl, combine the spinach, apple slices or cubes, and crispy speck.
  5. Toast the walnuts in a dry pan for a few minutes until lightly golden and fragrant, then add them to the salad.
  6. For the dressing, mix a pinch of salt, pepper, extra virgin olive oil, and fresh lemon juice in a small bowl. Adjust the quantities to your taste.
  7. Pour the dressing over the salad and toss well to ensure every ingredient is evenly coated.
  8. Finish the dish with Parmesan shavings.

Serve this fresh and crunchy salad as an appetizer or as a light and complete meal.

Fun Fact

Speck is a typical product from the Italian alpine regions, particularly Trentino-Alto Adige, and is known for its smoky and spiced flavor that pairs beautifully with the sweetness of apples and the lively taste of spinach.
