Squid Skewers
07/12/2023Preparing squid skewers is a great way to enjoy this mollusk in a simple and delicious manner. Here is the recipe for grilled skewers with an Italian touch.
Ingredients
- 500 g cleaned squid
- 2 garlic cloves
- Extra virgin olive oil
- Fresh chopped parsley
- Salt and pepper to taste
- Lemon juice
- Lemon slices for serving
- Toothpicks or wooden skewers (soaked in water for at least 30 minutes)
Preparation
- Start by cleaning the squid if not already done. Remove the innards, outer skin and tentacles, then cut the squid tubes into rings about 1-2 cm (if you prefer they can remain whole if not too large).
- Prepare a marinade by mixing in a bowl the extra virgin olive oil with the chopped garlic, fresh parsley, salt, pepper and a bit of lemon juice.
- Place the squid in the marinade and let them rest in the refrigerator for about 30 minutes.
- Meanwhile, prepare the grill so that it is very hot.
- Thread the squid onto the skewers (if they are rings, a few pieces per skewer; if you left the squid whole, one per skewer).
- Cook the skewers on the hot grill, turning them occasionally, for about 2-3 minutes per side, or until golden and cooked through.
- Once cooked, serve the skewers immediately with lemon slices on the side that guests can squeeze over the squid as they wish.
Trivia
Squid is highly appreciated in Mediterranean cuisine, and can be cooked in various ways. Skewers, in particular, offer excellent exposure to heat which allows the squid to cook evenly and quickly, preserving their tenderness if not cooked too long. Remember that overcooking can make them rubbery.
