Stewed Cod
17/11/2023Stewed cod is a classic dish of Italian cuisine, simple but full of flavor. Here’s how it’s prepared:
Ingredients
- 600 g fresh or frozen cod (if frozen, thaw it first)
- 1 medium onion, chopped
- 2 garlic cloves, chopped
- 500 ml tomato passata
- A bunch of fresh parsley, chopped
- Pitted black olives, to taste
- Salted capers, rinsed, to taste
- Salt and pepper to taste
- Extra virgin olive oil
- A glass of white wine
Preparation

If your cod is frozen, make sure to thaw it completely before starting. Begin by heating a little extra virgin olive oil in a large pan over medium heat.

Add the chopped onion and garlic and sauté until they become translucent, being careful not to burn them.

Once the onion has softened, add the glass of white wine and let it evaporate for a few minutes.

Add the tomato passata to the pan with the onion and garlic, along with the rinsed capers and black olives. Season with salt and pepper to your taste, and let it cook over medium heat for about 10 minutes, until the sauce starts to thicken slightly.

Gently place the cod pieces into the sauce, cover them with a little sauce, and let them cook for about 10-15 minutes, or until the fish turns opaque and flakes easily with a fork.

At the end of cooking, sprinkle with the chopped fresh parsley and serve the stewed cod hot.
