Stracciatella Cake

The stracciatella cake is a deliciously simple dessert inspired by the famous ice cream flavor, characterized by the presence of chocolate shavings distributed throughout the batter. Here’s how to make it.

Ingredients

  • 200 g of 00 flour
  • 200 g of sugar
  • 3 eggs
  • 100 g of softened butter
  • 120 ml of milk
  • 1 packet of baking powder
  • 1 pinch of salt
  • 1 teaspoon of vanilla extract
  • 100 g of dark chocolate (coarsely chopped)

Preparation

  1. Preheat the oven to 180 °C and butter and flour a springform cake pan.
  2. In a bowl, mix the sifted flour with the baking powder and a pinch of salt.
  3. In another bowl, beat the eggs with the sugar until you obtain a frothy and pale mixture.
  4. Add the softened butter to the egg and sugar mixture and continue mixing.
  5. Incorporate alternating the flour mixture and the milk, until you obtain a homogeneous batter.
  6. Add the vanilla extract and mix again to distribute it evenly.
  7. Add the chopped dark chocolate and mix gently with a spatula to distribute it in the batter.
  8. Pour the batter into the prepared pan and level it with a spatula.
  9. Bake in the oven for about 35-40 minutes or until a toothpick inserted in the center comes out clean.
  10. Remove the cake from the oven and let it cool completely on a wire rack before serving.

Fun Facts

The name “stracciatella” comes from the Italian verb “stracciare”, which means “to tear” or “to shred”. This is because the chocolate shavings in the batter look like they have been torn and distributed randomly, just like in stracciatella ice cream, which is one of the most loved flavors in Italy and around the world.

The stracciatella cake is perfect to serve as a dessert or for a special breakfast, accompanied by a cup of coffee or a glass of milk.
