Stracciatella Ice Cream Cake

Here is the recipe for a delicious Stracciatella ice cream cake, a frozen and indulgent version of the classic Italian ice cream flavor.

Ingredients

  • 200 ml fresh whipping cream
  • 1 can of condensed milk (about 397 g)
  • 100 g dark chocolate
  • 1 teaspoon vanilla extract
  • Dry biscuits (Digestive type) for the base, about 200-250 g
  • 100 g melted butter

Preparation

  1. Start with preparing the base of the ice cream cake. Finely chop the biscuits in a food processor or put them in a food bag and crush them with a rolling pin until you get fine crumbs.
  2. Mix the biscuit crumbs with the melted butter until you get a homogeneous mixture. Press this mixture onto the bottom of a springform pan (preferably 22-24 cm in diameter) lined with parchment paper, creating a compact base. Place in the refrigerator to cool while you prepare the rest.
  3. Whip the fresh cream, adding the vanilla extract towards the end of whipping. The cream should be firm but still soft.
  4. Gently add the condensed milk to the whipped cream, trying not to deflate the mixture.
  5. Cut the dark chocolate into flakes or very small pieces (you can use a knife or grate it).
  6. Incorporate the chocolate flakes into the cream and condensed milk mixture, stirring gently.
  7. Pour the mixture onto the biscuit base as evenly as possible.
  8. Cover with plastic wrap and put in the freezer for at least 4-5 hours, or even better overnight.
  9. Before serving, remove the Stracciatella ice cream cake from the freezer and let it sit at room temperature for a few minutes to make it easier to cut.
