Stracciatella Ice Cream Cake Wedges

Ingredients
- 200 ml fresh whipping cream
- 200 g dark chocolate
- 300 ml condensed milk
- 1 teaspoon vanilla extract (or the seeds of a vanilla bean)
- 100 g dark chocolate coarsely chopped (for the stracciatella effect)
Preparation
- Start by whipping the fresh cream until you obtain a firm but still soft consistency.
- Melt the 200 g of dark chocolate in a double boiler or in the microwave, being careful not to overheat it. Let it cool slightly.
- In a large bowl, mix the condensed milk with the vanilla extract.
- Gently fold the whipped cream into the condensed milk and vanilla mixture, moving the spoon from bottom to top so as not to deflate the mixture.
- Take about a third of the mixture and combine it with the melted dark chocolate, stirring until you obtain a uniform color.
- At this point, add the coarsely chopped chocolate to the white mixture to create the stracciatella effect.
- Use a springform pan or a silicone cake mold. First pour the chocolate mixture to create the base and then add the light mixture with the chocolate flakes on top.
- Level the surface well and place in the freezer for at least 4 hours, or until the ice cream is well solidified.
- When ready to serve, carefully remove the ice cream cake from the mold and let it soften for a few minutes at room temperature before cutting it into wedges.
