Strawberry Mousse

Strawberry mousse is a fresh and delicious dessert, perfect for spring and summer. Let’s see together how to prepare it.

Ingredients

  • 250g fresh strawberries
  • 100g powdered sugar
  • 200ml whipping cream
  • Juice of 1/2 lemon
  • 3 sheets of gelatin (or fish glue)
  • 2 egg whites

Preparation

  1. Start by cleaning the strawberries: wash under cold running water and remove the stem. Set aside some strawberries for the final decoration.
  2. Blend the strawberries with a mixer or blender together with half of the powdered sugar and the lemon juice until you obtain a homogeneous puree.
  3. Soak the gelatin sheets in cold water for about 10 minutes until they have softened.
  4. Squeeze the gelatin and dissolve it in a saucepan with 2 tablespoons of water over low heat. As soon as the gelatin is dissolved, remove from heat and incorporate it into the strawberry puree.
  5. Whip the very cold cream until it becomes frothy and firm, then gently fold it into the strawberry puree, using a spatula to mix from top to bottom to maintain the incorporation of air.
  6. In another bowl, whip the egg whites to stiff peaks with the remaining powdered sugar until you obtain a firm meringue.
  7. Incorporate the meringue into the strawberry and cream mixture as well, always mixing with gentle movements from top to bottom so as not to deflate the mixture.
  8. Pour the mousse into cups or a single container and let it rest in the refrigerator for at least 3 hours, or until it is well set.
  9. Decorate the mousse with the strawberries set aside and, if desired, a dollop of whipped cream or some fresh mint leaves before serving.
