Strozzapreti with Porcini and Truffle

Ingredients

  • 400 g strozzapreti or other rustic pasta
  • 300 g fresh or frozen porcini mushrooms
  • Fresh black truffle (quantity as desired)
  • 2 garlic cloves
  • Fresh chopped parsley
  • 200 ml cooking cream (optional)
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Grated Parmesan or Pecorino (for serving)
  • Butter (optional)

Preparation

  1. If using fresh porcini, clean them and cut into pieces. If they are frozen, let them thaw and then proceed as for fresh.

  2. In a large enough pan, heat extra virgin olive oil and a piece of butter if used, add the garlic cloves and sauté.

  3. Add the cut porcini and cook over medium heat until golden. Season with salt and pepper.

  4. If you decide to use the cream, add it to the mushrooms and cook over low heat until you get a creamy sauce.

  5. Meanwhile, cook the strozzapreti in a pot of boiling salted water following the package instructions.

  6. Drain the pasta al dente, reserving some of the cooking water.

  7. Transfer the pasta to the pan with the mushrooms and toss together, adding a bit of the reserved cooking water to bind the ingredients.

  8. Add fresh chopped parsley and mix well.

  9. Serve the dish hot and finish by generously grating fresh truffle directly over the pasta.

  10. Add grated Parmesan or Pecorino if desired and serve immediately.
