Stuffed and Fried Red Mullets

Ingredients
- 4 fresh red mullets, gutted and headless
- 50 g of breadcrumbs
- 1 clove of garlic
- Fresh parsley to taste
- 1 tablespoon of capers in salt
- 10 pitted green olives
- 1 egg
- Salt to taste
- Pepper to taste
- Flour for dusting
- Extra virgin olive oil for frying
Preparation

Start by preparing the filling. Finely chop the garlic, parsley, capers rinsed under cold water to remove the salt, and the green olives.

In a bowl, mix the breadcrumbs with the chopped garlic, parsley, capers, and olives. Add the egg, a pinch of salt and pepper. Mix well until you obtain a homogeneous mixture.

Gently open the red mullets like a book and fill them with the prepared mixture.

After stuffing them, coat the red mullets in flour, making sure not to leave any empty spaces and ensuring to cover the entire surface.

Heat plenty of extra virgin olive oil in a pan and, when it is very hot, fry the red mullets until they are golden on both sides.

Once cooked, drain them on absorbent paper to remove excess oil.

Serve hot, perhaps accompanied by lemon wedges and a fresh seasonal salad.
