Stuffed Potato Meatloaf
17/11/2023The stuffed potato meatloaf is a hearty and tasty second course, which can also be served as a one-course meal. Here is the recipe for you:
Ingredients
- 1 kg potatoes
- 2 egg yolks
- 100 g grated Parmesan cheese
- Salt and pepper to taste
- Nutmeg to taste
- 100 g diced cooked ham
- 100 g mozzarella or other stringy cheeses, diced
- 50 g breadcrumbs
- Butter to taste.
Preparation
- Start by washing the potatoes and boiling them in salted water until they become soft.
- Once cooked, drain them, peel them and mash them with a potato masher to obtain a puree.
- Add the egg yolks, Parmesan, a pinch of salt, pepper and nutmeg to taste to the mashed potatoes. Mix well until you get a homogeneous mixture.
- Take part of the potato mixture and spread it on a sheet of parchment paper, shaping it into a rectangle about 1-2 cm thick.
- Distribute the diced cooked ham and the stringy cheese on the potato rectangle, leaving a free border on the sides.
- Using the parchment paper, gently roll the meatloaf onto itself, sealing the ends well.
- Sprinkle the outside of the meatloaf with breadcrumbs and place some butter flakes on the surface.
- Bake in a preheated oven at 180 °C for about 30 minutes or until golden on the surface.
- Let it rest for a few minutes before slicing the meatloaf and serving it.
