Stuffed Potato Meatloaf

The stuffed potato meatloaf is a hearty and tasty second course, which can also be served as a one-course meal. Here is the recipe for you:

Ingredients

  • 1 kg potatoes
  • 2 egg yolks
  • 100 g grated Parmesan cheese
  • Salt and pepper to taste
  • Nutmeg to taste
  • 100 g diced cooked ham
  • 100 g mozzarella or other stringy cheeses, diced
  • 50 g breadcrumbs
  • Butter to taste.

Preparation

  1. Start by washing the potatoes and boiling them in salted water until they become soft.
  2. Once cooked, drain them, peel them and mash them with a potato masher to obtain a puree.
  3. Add the egg yolks, Parmesan, a pinch of salt, pepper and nutmeg to taste to the mashed potatoes. Mix well until you get a homogeneous mixture.
  4. Take part of the potato mixture and spread it on a sheet of parchment paper, shaping it into a rectangle about 1-2 cm thick.
  5. Distribute the diced cooked ham and the stringy cheese on the potato rectangle, leaving a free border on the sides.
  6. Using the parchment paper, gently roll the meatloaf onto itself, sealing the ends well.
  7. Sprinkle the outside of the meatloaf with breadcrumbs and place some butter flakes on the surface.
  8. Bake in a preheated oven at 180 °C for about 30 minutes or until golden on the surface.
  9. Let it rest for a few minutes before slicing the meatloaf and serving it.
