Stuffed Potato Roll with Provola

The stuffed potato roll with provola is a tasty dish that can be served both as an appetizing starter and as a substantial main course. Here’s how to prepare it.

Ingredients

  • 800 g potatoes
  • 2 eggs
  • 100 g grated Parmesan
  • Salt and pepper to taste
  • Nutmeg to taste (optional)
  • 200 g smoked provola
  • 150 g cooked ham (optional)
  • Breadcrumbs to taste
  • Butter to taste
  • Extra virgin olive oil to taste

Preparation

  1. Start by boiling the potatoes in plenty of salted water until they are well cooked. Drain the potatoes, let them cool slightly, peel them, and mash them with a potato ricer, collecting the purée in a bowl.
  2. Add the eggs, grated Parmesan, salt, pepper, and a pinch of nutmeg if desired to the potato purée. Mix well until you obtain a homogeneous mixture.
  3. Spread the potato mixture on a sheet of parchment paper to form a rectangle about 1 cm thick, trying to keep the shape as regular as possible.
  4. Slice the smoked provola thinly and arrange the slices on the potato layer, leaving a margin along the edges. If you want to add an extra touch of flavor, you can also add slices of cooked ham on top of the provola.
  5. Using the parchment paper, gently roll the potato rectangle onto itself, sealing the provola and ham filling inside the roll.
  6. Brush the surface of the roll with a little melted butter (or extra virgin olive oil) and sprinkle it with breadcrumbs to form a golden crust during baking.
  7. Bake in a preheated oven at 180 °C for about 30 minutes or until the surface is golden and crispy.

Serve the potato roll still hot, slicing it to reveal the stringy provola filling. It is a dish that always makes a great impression at the table and can also be prepared in advance.
