Stuffed Zucchini Rolls
17/11/2023Stuffed zucchini rolls are a very tasty and easy-to-prepare summer appetizer. Here is the recipe to make them:
Ingredients
- 3 large zucchinis
- 200g ricotta
- 50g grated parmesan
- Sliced cooked ham (amount as desired)
- Chopped chives (to taste)
- Salt and pepper (to taste)
- Extra virgin olive oil (for grilling the zucchinis)
Preparation

Wash and dry the zucchinis, then slice them lengthwise, about 3-4 mm thick, using a mandoline or a sharp knife.

Heat a grill or non-stick pan and lightly brush the zucchini slices with extra virgin olive oil. Grill the zucchini slices on both sides until soft and with the classic grill marks. Set them aside on a plate and let them cool.

In a bowl, mix the ricotta with the grated parmesan, add the chopped chives, salt and pepper to taste. Mix well until you get a homogeneous mixture.

Take a grilled zucchini slice, spread a layer of ricotta and parmesan cream, then add a slice of cooked ham on top.

Gently roll the zucchini from the short side to form a pinwheel, and secure it with a toothpick to maintain the shape.

Repeat the process for all zucchini slices. You can serve the rolls immediately or leave them in the fridge for a few hours before serving.
