Swordfish Rolls with Apple Sauce

Ingredients

  • 8 thin slices of swordfish
  • 1 green apple
  • 1 shallot
  • Juice of half a lemon
  • 100 ml of white wine
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Preparation

  1. Start by cleaning the swordfish, making sure the slices are thin and skinless. If necessary, pound them lightly with a rolling pin between two sheets of parchment paper to thin them further.

  2. Salt and pepper the swordfish slices on both sides.

  3. Peel the apple and cut it into very small cubes. Place the cubes in a bowl and season with lemon juice to prevent them from browning.

  4. Finely chop the shallot and sauté it in a pan with a drizzle of extra virgin olive oil until it becomes translucent.

  5. Add the apple cubes to the shallot and let them flavor for a couple of minutes.

  6. Deglaze with white wine and let the alcohol evaporate over medium heat. Cook for about 5 minutes, until the apple softens. If necessary, add a little water. Then, blend everything with an immersion blender to obtain a smooth sauce and keep warm.

  7. Arrange the swordfish slices on a flat surface and roll them up to form the rolls.

  8. Secure the rolls with a toothpick to prevent them from opening during cooking.

  9. In a non-stick pan, heat a little oil and cook the swordfish rolls for about 2 minutes per side, until golden and cooked.

  10. Arrange the rolls on a serving plate and pour the hot apple sauce over them.

  11. Garnish with fresh chopped parsley and serve immediately.
