Swordfish Rolls

Swordfish rolls are a delicious dish, typical of Sicilian cuisine. Here is the recipe:

Ingredients

  • 8 slices of swordfish (about 5 mm thick)
  • 80 g breadcrumbs
  • 40 g raisins
  • 40 g pine nuts
  • 1 bunch chopped parsley
  • 4 anchovy fillets in oil
  • 2 garlic cloves
  • Oregano to taste
  • Salt and pepper to taste
  • Extra virgin olive oil to taste
  • Lemon slices, for garnish

Preparation

  1. To start, soak the raisins in hot water for about 10-15 minutes to hydrate them.
  2. In a bowl, mix the breadcrumbs with chopped parsley, the squeezed raisins, pine nuts, chopped anchovies, a pinch of oregano, and a grind of pepper. Mix the mixture well with a little oil until you obtain a homogeneous compound.
  3. Lay out the swordfish slices and pound them lightly to make them more extended. Lightly salt each slice.
  4. Distribute a bit of the prepared filling on each swordfish slice, without overdoing it to prevent it from leaking out during cooking.
  5. Roll the swordfish slices onto themselves forming rolls. Seal the rolls with a toothpick to maintain the shape during cooking.
  6. In a non-stick pan, heat a drizzle of oil with the garlic cloves and place the swordfish rolls in it.
  7. Cook the rolls over medium heat, turning them gently to brown them evenly on all sides.
  8. Once cooked, remove the toothpick, plate the rolls and serve garnished with lemon slices.
