Ingredients
- 320 g tagliatelle
- 2 bell peppers (red and yellow, for a mix of colors)
- 1 small onion
- 2 garlic cloves
- 50 ml white wine
- 30 ml cooking cream (optional)
- Extra virgin olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Grated Parmesan for serving
Preparation
- Start by washing and cleaning the bell peppers. Cut them in half, remove the seeds and the white inner parts, and then cut them into strips or cubes, depending on your preference.
- Finely chop the onion and the garlic cloves. In a large skillet, sauté the onion and garlic with a drizzle of extra virgin olive oil until they become translucent.
- Add the chopped bell peppers to the skillet and let them brown for a few minutes. Then, deglaze with the white wine, allowing it to evaporate over medium heat.
- Lower the heat, cover with a lid and let the bell peppers cook for about 15-20 minutes or until they are soft. If necessary, add a little water to prevent them from drying out too much.
- (Optional) If you want a creamy sauce, add the cooking cream and cook for another 5 minutes. Adjust with salt and pepper.
- Meanwhile, bring a large pot of salted water to a boil and cook the tagliatelle until the desired doneness (al dente is always the best choice).
- Drain the pasta and pour it into the skillet with the bell pepper sauce, mixing well to ensure the tagliatelle combine with the sauce.
- Plate the tagliatelle and garnish with fresh basil leaves or chopped parsley. Sprinkle with grated Parmesan to taste and serve immediately.
