Ingredients

  • 500 g of 00 flour
  • 200 ml of white wine
  • 100 ml of extra virgin olive oil
  • 10 g of salt
  • 1 teaspoon of ground ginger
  • 1 teaspoon of ground turmeric
  • Fennel seeds (optional)
  • Ground black pepper (optional)

Preparation

  1. In a large bowl, mix the flour with the salt, ginger, and turmeric, also adding the fennel seeds and black pepper if you want a bolder flavor.
  2. Add the extra virgin olive oil and start kneading.
  3. Gradually pour in the white wine and continue working the dough until it becomes smooth and homogeneous.
  4. Take small portions of dough and roll them into thin ropes. Join the ends of the ropes to give the taralli their typical ring shape.
  5. In a large pot, bring water to a boil. Drop the taralli in a few at a time and drain them with a slotted spoon as soon as they rise to the surface.
  6. Arrange the taralli on a baking tray lined with parchment paper and let them dry for a few hours or until they are completely dry to the touch.
  7. Bake the taralli in a preheated oven at 200 °C for about 20-25 minutes or until they start to turn golden.
  8. Let them cool on a wire rack before serving.
