Torta Camilla

Torta Camilla is a classic cake, known for its moist texture and the characteristic flavor given by the carrots. This is a basic recipe that can be customized according to your own tastes and preferences.

Ingredients

  • 300 g carrots (weighed already cleaned and peeled)
  • 200 g granulated sugar
  • 200 g flour
  • 100 ml vegetable oil
  • 3 eggs
  • 1 packet baking powder
  • 1 pinch of salt
  • Zest of 1 untreated lemon (optional)
  • 100 g chopped almonds (optional)
  • Powdered sugar for decorating (optional)

Preparation

  1. Preheat the oven to 180 °C and prepare a cake pan by greasing and flouring it, or lining it with parchment paper.
  2. Clean, peel, and finely grate the carrots.
  3. In a bowl, beat the eggs with the sugar until you obtain a light and frothy mixture.
  4. Add the vegetable oil in a thin stream while continuing to beat.
  5. Add the grated carrots and the grated lemon zest, if you decide to use it.
  6. In another bowl, mix the flour, baking powder, and the pinch of salt. Then add the chopped almonds if you prefer a slightly crunchy texture.
  7. Incorporate the dry ingredients into the egg and sugar mixture, mixing gently with a spatula to avoid deflating the batter.
  8. Pour the batter into the prepared pan and level it with a spatula.
  9. Bake in the oven for about 40 minutes or until a toothpick inserted into the center of the cake comes out clean.
  10. Let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
  11. Before serving, you can dust with powdered sugar for an extra touch of sweetness and a refined appearance.

Torta Camilla can be enriched in many ways, for example by adding chopped walnuts or spices like cinnamon for a more spiced flavor. Furthermore, in some variations alternative flours are used, such as almond or hazelnut flour, to give a more intense flavor and a softer texture.
