Tricolor Puff Pastry Cake

Ingredients

  • 2 rolls of rectangular puff pastry
  • 200 g green pesto (for the green part)
  • 200 g ricotta (for the white part)
  • 200 g tomato passata (for the red part)
  • 1 egg yolk (for brushing)

Preparation

  1. Preheat the oven to 200 °C.
  2. Unroll the first sheet of puff pastry onto a baking tray lined with parchment paper.
  3. Spread an even layer of green pesto, leaving a border of about 1 cm free along the edges of the puff pastry.
  4. Over the pesto, spread a layer of ricotta, trying to maintain the separation of colors.
  5. Finally, complete the tricolor with a layer of tomato passata, always taking care to keep the colors separate.
  6. Unroll the second sheet of puff pastry and place it over the first, pressing lightly on the edges to seal them.
  7. Brush the surface with the egg yolk to give the cake a golden appearance after baking.
  8. With a sharp knife, you can lightly score the surface of the puff pastry for decoration, being careful not to cut through the dough completely.
  9. Bake the tricolor cake for about 20-25 minutes or until the puff pastry is golden and crispy.
  10. Once baked, let it cool for a few minutes before slicing and serving.

This tricolor cake is a great way to celebrate Italian events or holidays like June 2, Republic Day, where the colors of the flag are particularly significant. Additionally, if you want to add an even more Italian touch, you could include thin slices of mozzarella between the layers to further enhance the flavor and the “white” appearance of the tricolor.
