Trofie with Sausage and Baked Pumpkin

Here is a recipe to prepare Trofie with Sausage and Baked Pumpkin with an Italian touch.

Ingredients

  • 400 g of fresh or dried trofie
  • 200 g of pumpkin, already cleaned
  • 200 g of sausage
  • 1 small onion
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Grated Parmesan
  • A sprig of rosemary

Preparation

  1. Preheat the oven to 200 °C.
  2. Cut the pumpkin into cubes and the onion into thin slices. Arrange the pumpkin and onion on a baking tray, season with oil, salt, pepper, and rosemary, and bake for about 20 minutes or until the pumpkin is soft and lightly golden.
  3. Meanwhile, in a pan, add a drizzle of oil and the crumbled sausage. Cook until browned, deglazing with a splash of white wine if desired.
  4. Bring a pot of salted water to a boil and cook the trofie according to the package instructions.
  5. Once the pasta is cooked, drain it and transfer to a bowl where you will mix the trofie with the pumpkin and sausage.
  6. Pour the mixture into a baking dish, sprinkle with grated Parmesan, and bake at 180 °C for 10 minutes or until the surface starts to become crispy.
  7. Serve hot.
