Veal Rolls with Prosciutto and Cheese

The veal rolls with prosciutto and cheese are a delicious dish and quite simple to prepare.

Ingredients

  • 4 thin slices of veal
  • 4 slices of prosciutto crudo
  • 4 slices of cheese (scamorza, fontina, provola or mozzarella, according to preference)
  • Flour, as needed to flour the rolls
  • Extra virgin olive oil
  • Salt and pepper, to taste
  • White wine, about one glass
  • Vegetable broth or water, to taste
  • Chopped parsley, for garnish
  • Optionally, chives to tie the rolls

Preparation

  1. Pound the veal slices lightly with a meat mallet to make them larger and thinner. Salt and pepper both surfaces.

  2. On each slice of meat, place a slice of prosciutto and one of cheese, leaving a free margin around the edges.

  3. Roll up the rolls starting from the narrowest part, and if necessary tie them with kitchen twine or secure with toothpicks, or alternatively, if you prefer, chives for a more sophisticated and natural touch.

  4. Dredge the rolls in flour, being careful to remove the excess.

  5. Heat a drizzle of oil in a pan and place the rolls, browning them on all sides.

  6. Deglaze with white wine and let the alcohol evaporate.

  7. Add a little vegetable broth or water to continue cooking without drying out the sauce too much.

  8. Cook the rolls over medium-low heat with the lid on for about 15-20 minutes, adding broth if it dries out too much.

  9. Make sure they are cooked and the meat is tender, adjusting salt and pepper if necessary.

  10. Plate the rolls and sprinkle them with fresh chopped parsley for a touch of color and freshness.
