17/11/2023The pairing of veal with pumpkin, potatoes, and mushrooms sounds delicious. Here is the recipe for a veal stew that combines these tasty ingredients.
Ingredients
- 600 g veal for stew
- 300 g pumpkin
- 300 g potatoes
- 250 g mushrooms (porcini or button)
- 1 onion
- 2 garlic cloves
- 1 sprig of rosemary
- 1 bay leaf
- 1 glass of white wine
- Meat or vegetable broth as needed
- Extra virgin olive oil
- Salt and pepper
Preparation
-
Cut the veal into cubes and brown them in a pan with a drizzle of extra virgin olive oil until golden on all sides. Then remove the meat from the pot and set it aside.
-
In the same pan, add the chopped onion and garlic cloves. Sauté until the onion becomes translucent.
-
Add the pumpkin and potatoes cut into cubes, a pinch of salt, pepper, the bay leaf, and chopped rosemary. Sauté for a few minutes.
-
Return the meat to the pan with the vegetables, then deglaze with the glass of white wine. Allow the alcohol to evaporate.
-
Cover everything with broth until it just covers the ingredients. Bring to a boil, then reduce the heat and simmer gently for about 1 hour and 30 minutes, checking occasionally and adding broth if necessary.
-
Meanwhile, clean the mushrooms and cut them into pieces. In a separate pan, sauté the mushrooms with a drizzle of oil and a pinch of salt until golden.
-
Add the mushrooms to the stew in the last 15 minutes of cooking so they absorb the flavors of the other ingredients.
-
Check the doneness of the meat and vegetables, adjusting salt and pepper if necessary.
-
Once ready, let it rest for a few minutes before serving the stew hot.
