White Lasagna with Salmon, Prawns and Spinach

Ingredients
- 9 sheets of lasagna pasta (fresh or pre-cooked)
- 300 g fresh salmon
- 200 g shelled prawns
- 300 g fresh spinach (or frozen)
- 500 ml béchamel
- 50 g grated Parmesan
- Salt and pepper to taste
- Extra virgin olive oil
- Nutmeg (optional)
- Butter (for the baking dish)
Preparation

Start by preparing the béchamel. Melt some butter in a saucepan, add the flour and cook for a minute. Pour in the hot milk little by little, stirring constantly to avoid lumps, until you obtain a thick sauce. Add salt, pepper and a grating of nutmeg to taste.

Clean the spinach, wash them and sauté in a pan with a drizzle of oil and a clove of garlic until wilted. Remove the garlic, squeeze the spinach to remove excess water and roughly chop them.

Dice the salmon and sauté the shelled prawns in a pan with a drizzle of oil, salt and pepper.

Butter a baking dish and spread a little béchamel on the bottom.

Arrange the first layer of lasagna sheets (if using pre-cooked ones, follow the package instructions to hydrate them).

Distribute a layer of salmon, prawns and spinach over the lasagna sheets, then cover with some béchamel and a sprinkle of Parmesan.

Repeat the process to create more layers until the ingredients are used up, finishing with béchamel and a generous sprinkle of Parmesan.

Bake in a preheated oven at 180 °C for about 40 minutes or until the lasagna is golden and bubbly on the surface.

Let the lasagna rest for 10 minutes before serving, so it sets and is easier to slice.
