White Lasagna with Salmon, Prawns and Spinach

Ingredients

  • 9 sheets of lasagna pasta (fresh or pre-cooked)
  • 300 g fresh salmon
  • 200 g shelled prawns
  • 300 g fresh spinach (or frozen)
  • 500 ml béchamel
  • 50 g grated Parmesan
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Nutmeg (optional)
  • Butter (for the baking dish)

Preparation

  1. Start by preparing the béchamel. Melt some butter in a saucepan, add the flour and cook for a minute. Pour in the hot milk little by little, stirring constantly to avoid lumps, until you obtain a thick sauce. Add salt, pepper and a grating of nutmeg to taste.

  2. Clean the spinach, wash them and sauté in a pan with a drizzle of oil and a clove of garlic until wilted. Remove the garlic, squeeze the spinach to remove excess water and roughly chop them.

  3. Dice the salmon and sauté the shelled prawns in a pan with a drizzle of oil, salt and pepper.

  4. Butter a baking dish and spread a little béchamel on the bottom.

  5. Arrange the first layer of lasagna sheets (if using pre-cooked ones, follow the package instructions to hydrate them).

  6. Distribute a layer of salmon, prawns and spinach over the lasagna sheets, then cover with some béchamel and a sprinkle of Parmesan.

  7. Repeat the process to create more layers until the ingredients are used up, finishing with béchamel and a generous sprinkle of Parmesan.

  8. Bake in a preheated oven at 180 °C for about 40 minutes or until the lasagna is golden and bubbly on the surface.
