Whole Wheat Savory Muffins

Here’s a basic recipe for whole wheat savory muffins that you can customize based on your tastes or what you have in your pantry.

Ingredients

  • 250g whole wheat flour
  • 2 eggs
  • 100ml milk
  • 80ml extra virgin olive oil
  • 1 packet baking powder for savory baked goods (about 16g)
  • 1 pinch of salt
  • 1 pinch of pepper
  • 100g grated cheese (such as Parmesan or Pecorino)
  • Additional ingredients of your choice (for example: sliced olives, sun-dried tomatoes, spinach, feta, etc.)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, mix the whole wheat flour with the baking powder, salt and pepper.
  3. In another bowl, beat the eggs, add the milk and oil and mix well.
  4. Combine the flour mixture with the liquid mixture, adding the additional ingredients you have chosen together with the grated cheese, and mix until you obtain a homogeneous batter.
  5. Distribute the batter into the muffin liners, filling them 3/4 full.
  6. Bake for about 20-25 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.
  7. Remove the muffins from the oven and let them cool on a wire rack before serving.

Trivia

Whole wheat savory muffins lend themselves to numerous variations; you can enrich them with aromatic herbs like rosemary or thyme for an extra touch. They are perfect for a brunch or for quick snacks, and if you like the sweet-salty combination, try adding a few pieces of apple or pear for a tasty contrast.

Remember that you can always give your dish a completely Italian touch, for example by adding traditional ingredients like grilled zucchini, diced cooked ham, cubed mozzarella or even pesto for a Mediterranean flavor.
