Whole Wheat Savory Muffins
17/11/2023Here’s a basic recipe for whole wheat savory muffins that you can customize based on your tastes or what you have in your pantry.
Ingredients
- 250g whole wheat flour
- 2 eggs
- 100ml milk
- 80ml extra virgin olive oil
- 1 packet baking powder for savory baked goods (about 16g)
- 1 pinch of salt
- 1 pinch of pepper
- 100g grated cheese (such as Parmesan or Pecorino)
- Additional ingredients of your choice (for example: sliced olives, sun-dried tomatoes, spinach, feta, etc.)
Preparation
- Preheat the oven to 180 °C.
- In a bowl, mix the whole wheat flour with the baking powder, salt and pepper.
- In another bowl, beat the eggs, add the milk and oil and mix well.
- Combine the flour mixture with the liquid mixture, adding the additional ingredients you have chosen together with the grated cheese, and mix until you obtain a homogeneous batter.
- Distribute the batter into the muffin liners, filling them 3/4 full.
- Bake for about 20-25 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.
- Remove the muffins from the oven and let them cool on a wire rack before serving.
