Ingredients

  • 200 g whole wheat spaghetti
  • 1 ripe avocado
  • 1 garlic clove
  • Juice of half a lemon
  • 2 tablespoons extra virgin olive oil

  • Paprika, rosemary or other herbs of your choice for the chickpeas
  • A pinch of chili flakes (optional)

Preparation

  1. Start by preheating the oven to 200 °C on fan mode to prepare the crispy chickpeas.
  2. Rinse and thoroughly dry the chickpeas, then season them with a drizzle of oil, salt, pepper, paprika and aromatic herbs of your choice. Spread them on a baking tray lined with parchment paper and bake for about 20-30 minutes or until golden and crispy.
  3. While the chickpeas are in the oven, bring a pot of salted water to a boil and cook the whole wheat spaghetti according to the package instructions for an al dente result.
  4. Prepare the avocado cream by blending the avocado flesh, garlic, lemon juice, extra virgin olive oil, salt and pepper in a food processor until creamy. If desired, add a pinch of chili flakes for a spicy kick.
  5. Once cooked, drain the spaghetti and reserve some cooking water. Place the spaghetti back in the pot and add the avocado cream, stirring well to combine everything. If needed, add a little of the reserved cooking water to make the sauce more fluid.
