Wholemeal Oat Plumcake
17/11/2023The wholemeal oat plumcake is an excellent choice for a healthy and nutritious breakfast or for an energy snack. Here is the recipe to prepare a delicious wholemeal oat plumcake:
Ingredients
- 200 g whole wheat flour
- 100 g oat flakes
- 100 g brown sugar (or other sweetener of your choice)
- 2 eggs
- 100 ml milk (you can use cow’s milk or a plant-based beverage)
- 80 ml seed oil (for example sunflower oil)
- 1 packet of baking powder (about 16 g)
- 1 pinch of salt
- Flavoring of your choice (for example vanilla or grated lemon zest)
Preparation
- Preheat the oven to 180 °C.
- In a bowl, mix the whole wheat flour, oat flakes, brown sugar, baking powder and the pinch of salt.
- In another bowl, beat the eggs with the chosen flavoring, then add the milk and seed oil and mix until you obtain a homogeneous mixture.
- Combine the liquid ingredients with the dry ones and mix well to avoid lumps.
- Pour the batter into a plumcake mold previously buttered and floured or lined with parchment paper.
- Bake the plumcake for about 35-40 minutes, or until golden and a toothpick inserted in the center comes out clean.
- Remove the plumcake from the oven and let it cool before removing it from the mold and serving.
Trivia
The “plumcake” is actually an English term that originally refers to a variety of cakes that contain fruit (such as plums, from which the name “plum”). However, in common parlance, the term has become synonymous with a specific type of oven-baked cake (that of the loaf cake), and today it includes a wide range of both sweet and savory variants.
Remember that you can further customize your plumcake by adding dried or fresh fruit to the batter, such as walnuts, almonds or apple pieces, to add texture and flavor.
