Yogurt and Apple Cake

The yogurt and apple cake is a simple and tasty dessert, perfect for breakfast or snack time. Here’s how to prepare it.

Ingredients

  • 2 or 3 apples (depending on size)
  • 250 g of 00 flour
  • 200 g of sugar
  • 125 g of plain yogurt (natural or vanilla)
  • 3 eggs
  • 100 ml of seed oil (sunflower or corn)
  • 1 packet of baking powder
  • 1 lemon (grated zest)
  • A pinch of salt
  • Powdered sugar (for decoration, optional)
  • Ground cinnamon (optional)

Preparation

  1. Preheat the oven to 180 °C and butter and flour a cake pan, or line it with parchment paper.
  2. Peel the apples, remove the core and cut them into thin slices or cubes, as you prefer. If you like, you can add a bit of cinnamon to the apples for a more spiced flavor.
  3. In a large bowl, beat the eggs with the sugar until you obtain a light and frothy mixture.
  4. Add the yogurt and seed oil, continuing to mix to combine the ingredients.
  5. Incorporate the sifted flour with the baking powder, the grated lemon zest and a pinch of salt, mixing gently to avoid lumps.
  6. Add the apple slices or cubes to the batter and mix gently to distribute them evenly.
  7. Pour the batter into the prepared pan and level the surface with a spatula.
  8. Bake the cake and cook it for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
  10. Before serving, dust with powdered sugar for an extra touch of sweetness and decoration.

The yogurt and apple cake is a lighter variant of the classic apple cake, thanks to the use of yogurt which replaces the butter. In Italy, every family has its own version of this dessert, with some even adding ricotta to the batter to make it even softer and moister.
