Yogurt and Apple Muffins
17/11/2023Yogurt and apple muffins are a tasty snack or a pleasant dessert and are simple to prepare. Here’s the recipe for you:
Ingredients
- 250 g of 00 flour
- 2 apples (preferably Golden or Renette variety)
- 150 g of sugar
- 125 g of plain yogurt
- 2 eggs
- 80 ml of vegetable oil
- 1 packet of baking powder
- 1 pinch of salt
- 1 teaspoon of ground cinnamon (optional)
- Powdered sugar (for decoration, optional)
Preparation
- Preheat the oven to 180 °C and prepare a muffin tin by lining the cups with paper liners.
- In a bowl, beat the eggs with the sugar until you obtain a light and frothy mixture.
- Add the yogurt and vegetable oil to the egg and sugar mixture, stirring gently.
- Peel the apples, remove the core, and cut them into small cubes.
- In a separate bowl, sift the flour with the baking powder, cinnamon (if using), and a pinch of salt.
- Combine the dry ingredients with the wet mixture and blend everything gently, being careful not to overwork the batter.
- Add the apple cubes and stir carefully to distribute them evenly throughout the batter.
- Fill the paper liners with the batter, without exceeding 2/3 of their capacity.
- Bake the muffins and cook them for about 20-25 minutes or until golden and a toothpick inserted in the center of a muffin comes out clean.
- Let the muffins cool before dusting them with powdered sugar, if desired.
These muffins are ideal for a nutritious breakfast or an indulgent snack. Here’s a fun fact: apples, in addition to adding a pleasant sweet-tart flavor, also provide moisture to the cake, keeping the muffins soft and delicious even the next day!
