Yogurt and Apple Muffins

Yogurt and apple muffins are a tasty snack or a pleasant dessert and are simple to prepare. Here’s the recipe for you:

Ingredients

  • 250 g of 00 flour
  • 2 apples (preferably Golden or Renette variety)
  • 150 g of sugar
  • 125 g of plain yogurt
  • 2 eggs
  • 80 ml of vegetable oil
  • 1 packet of baking powder
  • 1 pinch of salt
  • 1 teaspoon of ground cinnamon (optional)
  • Powdered sugar (for decoration, optional)

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tin by lining the cups with paper liners.
  2. In a bowl, beat the eggs with the sugar until you obtain a light and frothy mixture.
  3. Add the yogurt and vegetable oil to the egg and sugar mixture, stirring gently.
  4. Peel the apples, remove the core, and cut them into small cubes.
  5. In a separate bowl, sift the flour with the baking powder, cinnamon (if using), and a pinch of salt.
  6. Combine the dry ingredients with the wet mixture and blend everything gently, being careful not to overwork the batter.
  7. Add the apple cubes and stir carefully to distribute them evenly throughout the batter.
  8. Fill the paper liners with the batter, without exceeding 2/3 of their capacity.
  9. Bake the muffins and cook them for about 20-25 minutes or until golden and a toothpick inserted in the center of a muffin comes out clean.
  10. Let the muffins cool before dusting them with powdered sugar, if desired.

These muffins are ideal for a nutritious breakfast or an indulgent snack. Here’s a fun fact: apples, in addition to adding a pleasant sweet-tart flavor, also provide moisture to the cake, keeping the muffins soft and delicious even the next day!
