Yogurt Cake

Yogurt cake is a simple and delicious dessert, much appreciated for its freshness and lightness. Here is the recipe to prepare it:

Ingredients

  • 3 eggs
  • 1 container of plain yogurt (125 g, which can then be used as a measuring cup)
  • 3 containers of flour
  • 2 containers of sugar
  • 1 container of seed oil
  • 1 packet of baking powder
  • 1 pinch of salt
  • Butter and flour for greasing and flouring the pan
  • (Optional) the grated zest of 1 lemon or 1 orange, to give a citrus aroma

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, beat the eggs with the sugar until you obtain a foamy and pale mixture.
  3. Add the yogurt and continue mixing.
  4. Gradually add the oil and mix well to incorporate it.
  5. Add the sifted flour with the baking powder and the pinch of salt, stirring gently to avoid lumps.
  6. (Optional) If desired, you can add the grated zest of lemon or orange to flavor the batter.
  7. Grease a pan (preferably a springform one) with butter and dust it with a little flour, removing the excess.
  8. Pour the mixture into the pan and level the surface.
  9. Bake the yogurt cake for about 30-40 minutes or until golden and a toothpick inserted in the center comes out clean.
  10. Remove the cake from the oven and let it cool before unmolding.

Curiosities: Yogurt cake is a dessert that lends itself to many variations; you can enrich it with fresh or dried fruit, chocolate chips or cocoa for a more indulgent version. Moreover, thanks to the use of yogurt, this cake is lighter and softer than those made with butter or other fats.

If you want a more Italian version, you could add ricotta to the batter to make it even softer and sprinkle the surface with granulated sugar before baking: this creates a pleasant crispy crust.
