Yogurt Cake Without Butter

The yogurt cake is a simple and light dessert, which can be prepared without butter for a lighter variant. Here’s how to make a yogurt cake without butter:

Ingredients

  • 1 jar of yogurt (125 g, the jar will then be used as a measuring cup)
  • 3 jars of 00 flour
  • 2 jars of sugar
  • 1 jar of seed oil
  • 3 eggs
  • 1 sachet of baking powder
  • 1 pinch of salt
  • Grated zest of 1 lemon (optional, for flavoring)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, beat the eggs with the sugar until you obtain a frothy and light mixture.
  3. Add the yogurt and mix well.
  4. Using the empty yogurt jar as a measuring cup, pour the seed oil into the mixture and stir.
  5. Gradually add the flour sifted with the baking powder and a pinch of salt, mixing to avoid lumps.
  6. If you wish to flavor the cake, add the grated lemon zest.
  7. Pour the mixture into a cake pan (preferably with a removable bottom) previously greased with a little oil or lined with parchment paper.
  8. Bake the cake for about 35-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
  9. Remove the cake from the oven and let it cool before unmolding it.

This cake is particularly loved for its versatility. It is possible to vary the flavor by using yogurts of different flavors or by adding chopped fruit, chocolate chips or dried fruit to the batter.
