Yogurt Fritters

Here is the recipe for yogurt fritters, with a small Italian touch that never hurts. These fritters are soft and light, optimal for a snack or a pleasant breakfast.

Ingredients

  • 250 g of 00 flour
  • 2 eggs
  • 250 g of Greek yogurt (or regular, if you prefer)
  • 50 g of granulated sugar
  • 1 packet of baking powder
  • 1 pinch of salt
  • Grated zest of 1 lemon (to give an Italian touch of freshness)
  • Oil for frying (you can use a seed oil suitable for frying)

Preparation

  1. In a large bowl, sift the flour and baking powder. This will help avoid lumps and make the mixture fluffier.
  2. In another bowl, beat the eggs with the sugar until you obtain a light and frothy mixture.
  3. Add the grated lemon zest and a pinch of salt to the yogurt, and mix well.
  4. Combine the yogurt mixture with the egg and sugar mixture, stirring gently.
  5. Incorporate the sifted flour with the baking powder, mixing until you obtain a smooth and homogeneous batter.
  6. Heat plenty of oil in a high-sided pan and, when hot, scoop portions of batter with a spoon and drop them into the oil.
  7. Fry the fritters until golden on both sides. Remember to turn them halfway through cooking to ensure they are evenly cooked.
  8. Drain them on paper towels to remove excess oil.
  9. Serve them hot, optionally dusted with powdered sugar or accompanied by jam.

Trivia

Fritters are a very versatile preparation widespread throughout Italy, with regional variants that include the addition of local ingredients such as raisins, apples or even ricotta. Yogurt fritters are a more modern and lighter version. In Italy, fritters are often associated with the celebration of Carnival, but they are perfect at any time of the year.
