Ingredients

  • 2 medium zucchini
  • 2 large potatoes
  • 1 egg (you can omit it if you want a vegan version and replace it with an alternative binder like breadcrumbs or flour)
  • 1 garlic clove
  • Salt and pepper to taste
  • Aromatic herbs to taste (for example parsley or basil)
  • Breadcrumbs, as needed
  • Grated cheese (optional, or if you want a vegan version you can use grated vegan cheese)
  • Extra virgin olive oil

Preparation

  1. Start by grating the zucchini and potatoes after washing and peeling them (the potatoes).
  2. Place the grated zucchini in a colander, sprinkle with a bit of salt and let them rest for about 10-15 minutes so they release excess water. Then squeeze them well with your hands.
  3. Boil or steam the grated potatoes until they become soft.
  4. In a large bowl, combine the zucchini, potatoes, egg (or substitute), grated cheese (if using), finely chopped garlic, aromatic herbs, salt and pepper.
  5. Add breadcrumbs little by little until you get a moldable mixture.
  6. Form burgers with the mixture and coat them further in breadcrumbs to create a crispy crust on the outside.
